Easy Recipe: Spaghetti Squash


I hope you are all doing well! I've been really busy with school and life so I haven't posted in a while but I will try to post more regularly! But back to business. As I'm sure I have mentioned before I am a lazy cook. I'm always looking for healthy easy recipes for me to whip up.  I recently rediscovered spaghetti squash, which I used to eat all the time in college and have been eating for many of my meals these past two weeks.

I love making spaghetti squash primarily because its so easy to make and it makes multiple meals, which I'm all for because it means I don't have to cook later in the week. It is also healthy and a great alternative to pasta (only 31 calories per cup!). Additionally, because it is so similar to pasta there are many different ways to prepare it!

Ingredients: 1 whole Spaghetti Squash, olive oil, salt, pepper, vegetables of your choice 

step one: the hardest part of this recipe is cutting the spaghetti squash in half. It takes me forever (darn these weak arms). Also at this time preheat the oven to 450 degrees.


step two: brush the squash with olive oil and place on a baking sheet with foil.

step three: place the squash in the fully heated oven for 50 minutes. 


step four: stir fry some veggies near the end of the 50 minutes.


step five: remove the squash from the oven and scrape the insides to make a spaghetti texture.


step six: add veggies and olive oil and enjoy!
